Wildflower honey is best described as a blend of floral nectar gathered by the bees to make a premium honey. The nectar brought into the hive goes through a drying period when the nectar is reduced to 18% moisture. When the moisture content hits 18% the honey bees cap the honey cells and it is ready to be extracted from the comb. Our goal is to best describe each honey so that you are informed by our years of tasting various honey’s.

Specialty honey is best described as nectar that is brought in from specific flora and contains at least 80% of that particular nectar. The nectar goes through a drying period which reduces the nectar to 18% moisture content. Once the nectar reaches the 18% moisture mark, the honey bees then cap the honey cells and it is then ready to be extracted from the comb.

Manuka honey is a rare kind of honey made only in New Zealand from the nectar of the Manuka tea tree (Leptospermum scoparium). Bees can only collect Manuka nectar for a few short weeks each summer when the tea tree blooms, which makes every jar special. The result is a thick, dark honey with a deep caramel flavor that reflects the wild, untouched regions where it’s made. Beyond taste, it’s known for the unique compounds it contains particularly MGO (methylglyoxal) which help support the body’s natural immune and digestive health while aiding overall well-being.
